This Vadouvan Masala blend makes a delicate, mild curry which complements fish and shrimp.
Vadouvan is a unique masala blend reflective of the French colonial influence on the Pondicherry region of India. The spice blend contains classic Indian spices like cardamom, coriander, cumin, fenugreek, and cinnamon and is cooked with shallots and onion, revealing the French influence. The blend can be used on roasted meat or fish or as a curry blend replacement in a variety of recipes.

The sweetness of this Vadouvan Masala blend pairs beautifully with shrimp or fish. Coat pieces in this blend before grilling, or use as a curry base. To make shrimp curry, marinade the shrimp with yogurt and vadouvan. Next, cook shallots, add more of the spice mix, and pureed tomatoes to make a sauce. Finally, add grilled or pan friend shrimp pieces to the sauce. Enjoy!
