This Shawarma spice blend produces a robust, fragrant roasted meat. Earthy flavors like coriander, cumin, and sumac pair with sharp black pepper and cloves to bring out the flavor in chicken, lamb, turkey, or goat.
While our modern-day understanding of shawarma dates to 19th century recipes from the Eastern Mediterranean, its origin is of course far more ancient. Evidence exists to support our ancient cavemen ancestors roasting seasoned meats on a stick, and shawarma is a direct descendant of this practice.
Today, the dish refers to a specific way of cooking meat recorded during the Ottoman Empire in the Levant. Pieces of seasoned meat are stacked on a vertical rotisserie that rotates while cooking, and chefs then slice off outer layers of meat to use in subsequent preparations.
Today, many permutations on this original method exist around the world. Shawarma in North Africa and the Middle East, gyros in Greece - even tacos al pastor in Mexico. Regardless of the derivation, the cooking technique is absolutely delicious.
This Shawarma spice blend contains:
- Coriander
- Sumac
- Cumin
- Cinnamon
- Cardamom
- Black pepper
- Turmeric
- Cloves
- Allspice
To use at home, marinate thinly sliced strips of meat with the Shawarma spice blend overnight. Pan fry on medium/high until the meat is crispy around the edges. Chop and serve with vegetables and pita bread. Enjoy!
