Hailing from the Genoa region of Italy, pesto literally means "to crush" in Italian. Traditionally prepared with a mortar and pestle, fresh basil leaves and garlic are ground to a paste olive oil, parmesan, and other flavorings added.
Pesto is a very versatile sauce. Classically served of course with pasta, it is also a delicious accompaniament to roasted meat, salads, or even eggs.

To use, add fresh basil leaves, garlic, and olive oil to a food processor or blender. Blend into a paste, then add spice mix. Blend until smooth. Toss with cooked pasta, top with parmesan, and enjoy!
