Khichri, or khichdi or khichari, is the ultimate South Asian comfort food. A hearty combination of fragrant spices, rice, and lentils, and vegetables, this is a common breakfast dish. Mothers also commonmly feed it to babies as their first solid meal. Of course, like all classic dishes, regional and household variations abound. Our khichri spice blend is a simple North Indian combination of spices.
The history of khichri is as ancient as the need for comfort food. It was reported as a staple food in India by Greek explorers as early as the third century BCE, though it is likely far older. Popular across Northern India and Pakistan, this dish still features prominently in the regional cuisines. The base of the dish is still typically rice and lentils with a variety of spices added during cooking and occasionally vegetables (such as cauliflower, peas, and potatoes) as well.
This Khichri spice blend contains:
- Mustard
- Turmeric
- Salt
- Cumin
- Ginger
- Fenugreek
- Asafoetida
To prepare, toast spices until lightly fragrant. Add rice, lentils, and any vegetables used along with water. Bring to a boil and then simmer for 40 minutes until grains are soft and tender.
