This dish hails from Egypt, where it is the official national dish. Koshari however is historically related to the Indian dish khichri and perhaps arrived to North Africa via the British. Regardless of its exact origin, the dish today combines Indian spices with Italian pasta and North African flavors. Thus koshari embodies the history and influences on its native country.
This Egyptian Koshari spice blend contains:
- Garlic
- Coriander
- Crushed red pepper flakes
- Onion
- Cumin
- Coriander
To prepare, begin by cooking rice, chickpeas, pasta, and lentils separately. Next, cook onions and garlic. Add Egyptian koshari spice blend to sauteed onions and pureed tomatoes and cook until thickened. Fry thinly sliced onion in oil until crispy, then assemble the koshari. Begin with the lentils and rice, then layer pasta, chickpeas, red sauce, and finally the fried onions. Enjoy!
I liked it, but it could be a bit spicier
