Pesto literally means to pound or crush, which is exactly how this 16th sauce was originally prepared. Chefs pounded basil, nuts, and spices together in a mortar and pestle to create a smooth sauce that still retained the rustic texture of its ingredients. The simple sauce has become a staple of Italian cooking as understood in the United States, served in restaurants nationwide offering a variety of Italian fare.
Like most Italian recipes, the quality of ingredients is so important. Our pesto mix combines high quality basil, garlic, and pine nuts for a delicious and easy shortcut to a basil pesto pasta. Pesto invites innovation; try adding sliced grilled chicken, sausage, or even salmon for a boost in protein.
Ingredients
- 1 pound imported Italian penne pasta
- 3 tbs pesto mix
- 2 tbs olive oil
- 1/4 cup Fresh grated Parmigiano Reggiano
- 2 tbs rough cut chopped fresh basil
- Salt
Directions
Bring a large pot of well-salted water to a boil. Add good quality pasta and follow cooking instructions on the packet.
Mix together the pesto mix, olive oil, and grated Parmeggiano in a small bowl. Taste, and add cheese, pesto mix, and/or salt to taste.
Drain the pasta, reserving a bit of the cooking water. Toss the cooked pasta with the pesto mix and fresh basil. Add cooking water if pasta seems dry.
Serve with more fresh grated cheese.
