Aloo gobi (which literally means "potato cauliflower" in Hindi) is a classic vegetarian dish on the subcontinent. This Indian dish is made with potato, cauliflower, tomato, and classic Indian spices. You can serve aloo gobi with rice, naan, roti, or other traditional Indian breads.
Sources agree that this dish originated in Northern India, a region where many Hindus eat vegetarian diets for religious reasons. Our recipe uses our Dal Masala spice blend for seasonings, which contains classic North Indian spices like coriander, cumin, red chili powder, ginger, and garlic.
Ingredients

2 medium or 3 small potatoes (Yellow Gold work well)

1 cauliflower head

2 medium tomatoes

1 onion

2 tablespoons Dal Masala

2 tablespoons neutral oil or ghee
Directions
Prepare the vegetables. First, wash the cauliflower well, then chop into bite sized pieces, removing the tough center stem. Next, cube the potatoes into ½ inch by ½ pieces. Chop the onions finely. Finally, cut the tomatoes into small pieces about the size of the potato cubes.
Heat oil or ghee in a heavy bottomed pan. Add onion and cook until translucent, ~8 minutes.
When the onion is translucent, add the spice mix and stir immediately to keep from burning. Add the potatoes, cover, and cook for 20 minutes, stirring periodically, until the potatoes begin to soften. If the potatoes get too dry, add a bit of water.
Add cauliflower and mix well. Cook on high heat for 3 minutes, stirring frequently, to fry the cauliflower.
Lower the heat to medium, add a couple of tablespoons of water, and cover. Cook for another 10 minutes or until the vegetables are fork tender.
Add the tomatoes, mix, and cook for another 5 minutes until the tomatoes are cooked.
Serve with rice, naan, or roti.
