½ cup bulgar wheat

Juice of 2 lemons

4 tablespoons good quality olive oil

½ teaspoon salt

1 large tomato (seeded and diced)

2 teaspoons Lebanese Tabbouleh spice blend

1 cup finely chopped fresh parsley
Directions
Whisk together the lemon juice, olive oil, salt, and spice blend in a large bowl.
Add the bulgar wheat to the vinaigrette and let sit until the bulgar has absorbed much of the liquid and is soft and plump.
Add the chopped tomatoes and parsely and mix well. Serve with pita bread.
